The May meeting included a lot of discussion about baking bread and tips for baking at this altitude.

Barb brought two loaves of Italian-style bread that she made with the Gluten Free Pantry French Bread Mix (follow the recipe except use 2 TBS less water). Both Fry's and the Basha's on the hill carry this product. Everyone thought the mix made a very tastey bread.

Andi brought blueberry muffins made with the Gluten Free Pantry Blueberry Muffin mix. These, too, were very tastey.

Katy told us her favorite recipe book is 1,000 Gluten Free Recipes by Carol Fenster. She's had good success with everything she's made from this book. She also indicated that her favorite pre-made bread is Kinnickinnick's Brown Sandwich Bread. She also likes the banana bread recipe on the back of Bob's Red Mill GF all purpose flour but you have to use at least three bananas to have the bread come out moist.
