October 2010

The October meeting was a tasty event. Brenda brought two types of sandwich bread for tasting -- one made from Pamela's bread mix and a gluten-free white bread made with Tom Sawyer flour. Barbara brought a loaf made from Gluten Free Pantry French bread and pizza mix. She modifies the recipe on the box by using 1.5 cups of water and 3 tablespoons of honey. She also make hamburger rolls from the mix. All were quite yummy.

Brenda and Tom also brought samples of their gluten-free chicken, beef, and salmon jerky along with instructions. They brought both regular and sweet versions of the jerky.

Brenda and Tom reported on attending the Gluten-free Fair at Mt. Hope Natural Foods in Cottonwood. They raved about the wide selection of gluten-free products available and all the opportunities for tastings. They said the speakers were interesting and they learned a lot. While there they sampled some English muffins that they said were just like "regular" English muffins. They've found that the Basha's in Woodlands plaza is now caryying them in the frozen food section.

Barbara referenced a website for a list of gluten-free Halloween candy. It's a very extensive list. She also noted that she had tried the Pamela's white cake mix and found that it was much improved by adding a tablespoon of vanilla and 1/4 cup of applesauce. She makes cupcakes with the mix and her modifications make them more flavorful and moister.
